After my visit to Las Paletas in Nashville, I’ve been craving popsicles. I went ahead and ordered some molds off of Amazon for about $10, if I wanted to try my hand at icy desserts, I figured I at least needed the tools if I was to try. Inspired by Las Paletas’ interesting and unconventional flavors, I thought it might be best to try a few new concoctions of my own. Why limit myself to one flavor for all 6 molds when I could try a few different adaptations? What I ended up with were a couple different and equally refreshing end of summer treats.
What you’ll need:
- 1 can of coconut milk
- 2 TBS agave syrup
- 20 fresh mint leaves
- 1/2 medium cucumber
- 8 raspberries
Start by blending the coconut milk with 1 1/2 tablespoons of agave. Separate half of the mixture out and set aside for the cucumber pops. Add raspberries and the remaining 1/2 tablespoon of agave (depending on the tartness of your raspberries you may or may not need the extra half tablespoon. Mine were very tart and the extra sweetener helped).
Pour two of the molds with just the raspberry and coconut milk mixture. Add five mint leaves to the remaining raspberry and milk and blend. Fill the third mold with the raspberry and mint mixture.
Rinse your blender out and add the remaining coconut milk, cucumber and mint. Blend until smooth and add to the three other molds. Put everything in the freezer and wait for it to set.
You’ll be left with some very refreshing treats, that may or may not make it in your freezer longer than the rest of the day. (mine hardly made it through the photo shoot)
