I’ve been having a problem with technology lately. In the past week, I’ve been stuck in an elevator at work (for only 5 minutes), stuck in the subway (for 30 minutes), my hard drive with all my photos and life died, and my one high-tech kitchen gadget, my juicer, died. Luckily for you, I managed to get one good last serving of my favorite juice out of it before the thing made a strange noise and emitted a little puff of weird smelling smoke. (At this point, I am somewhat convinced I currently have a poltergeist)
But let’s talk about this juice. Since we were gifted the juicer, this was one of my very first tries on juicing. I wanted to add something to the juice that I didn’t normally eat, but is very healthy. Let me introduce you to the beet. Known for having a reducing effect on blood pressure and all that jazz, it’s just a really cool color.
The earthy flavor of beets is sometimes hard for people to handle, which is why I sweetened it with the carrots and apple – they really give a sweeter and more complex flavor to the batch.
What you’ll need: (per serving)
- 1 1/2 medium beets
- 3 medium whole carrots
- 1 red (I used gala) apple
Start by juicing the beets first, followed by the carrots and finally the apple. The softer fruits will help push through any remaining beet byproducts that were still stuck in the juicer. I like to top everything off with a couple of ice cubes and a good swirl with a spoon to mix everything together. I mean, how can you not want to drink this? It’s like a magenta party for your mouth!
Love that you’ve made this free of sugar and sweetener and just used the natural sweetness of the carrots and apple! Awesome! I’ll be making this next week for sure! 🙂

I wish I had home grown carrots & beets!! Living in an apartment, I’m lucky if I can get basil to grow on my windowsill – no room for a real garden!
Maybe there is the possibility to hire an allotment nearby. That is what we do! 🙂
