Seeing as though my first crack at overnight oats was a success, I decided to try and see if I’d get the same result with steel-cut oats. This time around I was out of fresh fruit, so I went with some frozen blueberries and a touch of vanilla extract.
What you’ll need:
- 1 cup steel-cut oats
- 1 1/4 cup almond milk (or milk of your choice)
- 1/4 approx frozen blueberries (fresh may be better if you have them on hand, if not frozen was just fine)
- 1/4 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 1/2 TBS flax seeds
- 1/4 cup almonds
I chose to layer everything up, starting with blueberries and almonds at the bottom. Add half the oats, the salt, cinnamon, flax seeds and vanilla followed by another layer of blueberries and almonds, and then top everything off with the milk.
I use mason jars, since they’re easy to seal and I like the way they look. Store them in the fridge overnight and in the morning you’ve got breakfast ready to go!
The result? MUCH heartier than the regular oats version, though definitely chewy. The texture was a little weird at first but after a couple bites I got used to it. I could only eat about a quarter of the jar, and ate the rest throughout the week. I’m not sure it’s my favorite, but it’s definitely a good alternative for you gluten-free folks out there. Maybe I’ll mess around with some other variations and see if any of those turn out better.
