It’s really not even close to being fall anymore. But for some reason this salad makes me think of fall. I’ve been on a bit of a kale salad kick and I was whipping this salad up to pack for work yesterday and I thought I just had to photograph it – it was too pretty not to. This is one of those super easy, super healthy salads that I wish I had thought of tossing all of this together earlier!
What you’ll need: (based on 1 serving)
- 2 cups chopped kale
- 1/3 cup cooked quinoa
- 1/3 cup chickpeas,
- 1/3 cup chopped cooked squash
- 1/4 cup chopped walnuts
- 1/8 cup dried cranberries
- 2 TBS tahini
- juice from 1/4 lemon
- 1 TBS warm water
It really doesn’t get any easier than this. Toss all the salad fixings in a bowl together. In a separate bowl, whisk the tahini, lemon and water together. Toss the salad with the dressing and enjoy! The thing I love about kale salads is they’re totally portable. Putting the dressing on early and not eating it for a while does not wilt the kale at all – making this a perfect take-to-work lunch. While I had everything laying around the apartment, I will definitely be making this again soon and I’m sure it will become one of my go-to lunches.
