This dressing, or sauce if you will, reminds me of being at the spa. Not that I exactly frequent a spa that often, but I imagine if I were to eat a spa, this is pretty much what it would taste like. Cool, refreshing, delicious.
The last time I hung out with my best friend she mentioned how easy it would be for everyone to be vegan if they just had better sauces. For some reason that thought has stuck in my head since then. Yes. Better sauces. It’s so true. I can only sautee veggies and serve over quinoa so many times a week before I start to get stick of it, no matter how delicious the veggies are. But add a spicy peanut sauce, or a sauce like this, and you’ve got a whole new meal.
I whipped this sauce up on a whim – on just one of those nights when I didn’t quite know what to do with all my veggies and quinoa but I knew I had to do something. We had just had peanut sauce the week before and then I noticed this bunch of cilantro rolling around in the fridge. It seemed to be calling my name.
I added some tahini for creaminess, lime for a little something tart, and cucumber to water it down but keep it refreshing. What came out of the blender was out of this world. It made quite a large batch, so I added it to the veggies and quinoa, to avocado toast, and even on top of tacos. The possibilities are endless. And it was as easy to make as firing up the ol’ food processor. It’s another way to get those leafy greens (cilantro counts as a leafy green, right?) while also taking plane jane weeknight meals to the next level.
Cucumber Cilantro Lime Dressing
What You’ll Need:
- 2 cups fresh cilantro
- 2 tablespoons tahini
- 1/3 cup cucumber
- 3/4 lime juice
- dash of salt
- Put all the ingredients into a food processor and blend until smooth. That’s it! Add it to your favorite veggies, sandwiches, tacos, whatever and prepare to think twice about your everyday recipes.
What an interesting combo. I’m not sure this would go over well in my household as my hubby cannot handle the taste of cilantro.
That’s too bad! You could try to sub the cilantro for mint if you’re looking for a more summery dressing – not sure it would work in tacos, but I bet it would still be pretty tasty!

LOVE cilantro! Cilantro and lime is pretty much my favorite flavor. Soooo fresh! Question, how much lime juice? It says 3/4. 3/4 of a cup seems like a lot…??
3/4 of a lime. So basically almost an entire lime.

Wow, this dressing sounds so good! All of my favorite flavors. And such a genius idea to use cucumber to thin it out, rather than water or oil or something! I’m inspired to try adding cucumber to some future salad dressings… 🙂
