Refreshing Watermelon Mint Slushies

One of my favorite discoveries while we were traveling in Asia was watermelon juice. It was the first thing I had when we arrived in Hanoi, the hotel brought it over to us and it was simply amazing. Watermelon is so full of well, water. Why haven’t I thought about drinking watermelon before? Ever since we’ve been back I’ve really wanted to try my hand at making something similar but I didn’t want to juice it per say… I wanted to puree to give it some sort of additional fiber, if that’s possible with watermelon?

Refreshing Watermelon Slushie Girl Eats Greens_0039 I decided to blend the watermelon with some mint for a little extra flavor, and make it even more refreshing. If I could, I might just stick a straw in a watermelon, but I thought the twist with mint would give it a little kick.

There’s really nothing better than an ice cold drink on a hot day – so I added ice to the blender as well – which really makes this slushie a slushie. On the plus side, this is one of the simplest recipes you could ever throw together. In about 5 minutes you’ll be kicked back, relaxing and enjoying a wonderfully refreshing and delicious slushie that’s way healthier than anything you’ll find at a 7-11 or wherever you may currently be getting your slushies…

And if you really want to make it a super fun drink – add a bit of vodka, gin, or rum. It’s a great adult’s-only take on a summer refresher. You could make these in batches and then add the ice and booze & blend for a party-time soon-to-be favorite summer drink.

Refreshing Watermelon Mint Slushies

  • Servings: 2
  • Difficulty: super easy
  • Print

What You’ll Need:

  • 4.5 cups (2.7 pounds) of watermelon
  • 1 cup ice
  • 1/4 cup mint
  • 1 teaspoon agave

What You’ll Do:

  • Put everything into a blender. Blend until smooth. (add booze if you so wish) Enjoy!
