Grilled Peaches & Walnut Salad with Chili Lime Dressing

Last week while I was out in Wisconsin I decided it would be easiest on both me and my family if I did a lot of the cooking. My parents are always quite confused with what to feed me and between my veganism and my dad’s Celiac (gluten allergy). While I mostly served dishes I’ve already blogged and taste-tested before, I couldn’t go an entire week without trying something new out! In fact, I tried out two new recipes. Sadly, this was the only one that turned out. But 50/50 odds aren’t that bad…right?

My parents have a grill – something I can’t possibly fit into my apartment and never get to experiment with – so I absolutely had to try out a new recipe with it when I had the chance. For some reason I thought I would be a bit out-of-the-box and grill a fruit. While I was at the Madison farmer’s market (a post on that is forthcoming – it’s AMAZING!), I picked up a bag of fresh and delicious arugula. There was a pile of fresh peaches in the fridge and I decided on making a salad out of everything.

I started by grilling the peaches while I looked around for other other ingredients to go with. I’ve never grilled a peach before. In fact, I’m not sure I’ve grilled anything before. But I made sure to use a pan in between the grills and the peaches just in case they got too mushy, and to prevent the peaches from touching any meat remnants on the grill. They were surprisingly delicious grilled. They got even sweeter, but also had a great smokey flavor. The combination of the two was heaven.

I served the peaches cut up over the arugula and added in some walnuts for crunch and added protein. For dressing I wanted to mix up something with a little spice to it, to juxtapose with the sweet and smokey of the peaches. So I used lime and chili to get a tangy and spicy dressing that really complimented the rest of the flavors in the salad and took it from good to simply delicious.

I was so proud of this really easy, simple lunch I managed to whip up. I only wish I had access to a grill all the time so I could make it again! If you’re lucky enough to have a grill, please give it a try and let me know what you think!

Grilled Peach & Walnut Salad with Chili Lime Dressing

  • Servings: 3
  • Difficulty: easy

What You’ll Need:

  • 2 peaches, cut in half and pits removed
  • 1 cup of walnuts, chopped slightly
  • 6 cups arugula
  • 2 tablespoons olive oil
  • 1 teaspoon ground chili pepper
  • 1/2 teaspoon apple cider vinegar
  • 2 teaspoons agave
  • Juice from 2 limes

What You’ll Do:

  1. Place the peaches on a grill (I was using a gas-powered grill that was set to medium-high heat). Grill for 10 minutes, flip, and grill for another 10 minutes.
  2. While the peaches are grilling, mix together the chili, agave, oil, vinegar and lime juice.
  3. Remove peaches from the grill, cut into bite-size pieces and place over arugula. Top with walnuts and drizzle with dressing. Serve warm or cold. Enjoy!
