What exactly are “overnight oats?” Just what they sound like. Oats. That are made overnight. While you sleep! So if you’re not a morning person, or you’re just a plan ahead kind of person – stick around. This post is made just. for. you.
Overnight oats are pretty much the easiest thing to make there is. I used to hear people talk about overnight oats and think that it meant there would be some sort of something I had to do with in the night. Well, that’s partially true. At night you do have to put a bunch of stuff in a jar. But then you know what? You put a cover on the jar and put it in the refrigerator. When you wake up, you open the fridge and eat. So easy right?
I like to play around with different types of overnight oats by adding different items to the mix. If you’re a purist – oats and almond (or any milk) all by itself will still be hearty and delicious. I like to go with various additions, like raspberry and banana or blueberries and almonds. This time around, with the weather still not entirely spring-like, I went for a maple pecan version. Because, well why not?
This might be one of my favorite overnight oat recipes I’ve made so far. I toy around a lot with them, and not all of them make their way onto the blog. But this one reminded me of a more traditional breakfast cereal, which I generally don’t buy. The pecans added a great crunch and texture along with their slightly sweet nutty flavor. The maple syrup adds even more sweetness and depth. With the added cinnamon and dash of nutmeg, it’s like a cereal pie party in your mouth. I even got surprised a few times when I stumbled upon a pecan that had been in a bag with some chocolate chips that had melted… I guess I never know what’s in my pantry! If you have five minutes tonight, definitely give this one a try.
Maple Pecan Overnight Oats
What You’ll Need:
- 1 cup rolled oats
- 1 cup unsweetened almond milk
- 1/3 cup pecans, chopped
- 2 tablespoons maple syrup
- dash cinnamon
- pinch nutmeg
What You’ll Do:
- Put all the ingredients in a mason jar or other sealable container.
- Put it in the refrigerator. Go to bed.
- Get up and eat. So easy, right? Enjoy!

I tried making overnight oats with yogurt and I did not really enjoy it. I think I’m going to try yours though. Maybe just simple almond milk will make the difference!
