I really have a love for avocados. It may actually be called an addiction. I could eat avocado every day with every meal and be perfectly happy. One of my most favorite light lunches or afternoon snacks is avocado toast. My good friend first got me into it when she served it as an appetizer when she had me over for dinner a while back. And now I can add avocado toast to my avocado addiction. So easy to prepare and so delicious. It’s an absolute favorite of mine – especially if I pick up a fresh loaf of crusty bread from the local bakery – it takes the toast to a beyond-wonderful level.
- 1 ripe avocado
- 1/2 lemon juice
- 3 slices crusty fresh bread
- red pepper flakes for garnish
- olive oil for drizzling
- dash of sea salt
Preheat your oven to broil (or if you have a toaster, go ahead and use that – I don’t have one and find the broiler allows for thicker pieces of bread anyway).
Cut and place the avocado into a bowl – add the lemon juice and use a fork to mash the avocado up a bit for easier spreading. Put the bread in the oven and watch carefully (the broiler burns so fast!)
Once the bread is toasted, put the mashed avocado on top, sprinkle with red pepper flakes, a dash of salt and drizzle with a bit of olive oil.
I’m telling you – this is heavenly.
